Raw honey means unpasteurised honey that is poured into jars at 37ºC - we chose this temperature because it’s the natural temperature for honey on a frame in a beehive on a summer’s day (in New Zealand!). The honey is filtered only with a coarse strainer which retains valuable pollen and propolis but removes any unwanted bee debris. We believe in minimal processing because all the natural enzymes, phytonutrients and higher activity levels are conserved in the jar. At a pasteurising 80ºC, the delicate enzymes of live raw honey are destroyed.


Pioneering research by Professor Peter Molan, Honey Research Institute, Waikato University first identified Manuka honey’s unique and powerful antimicrobial and anti-inflammatory properties.
